Chen Pi - Dried Citrus Peel

In TCM, Chen Pi (dried citrus peel) is valued for its ability to gently awaken and regulate the digestive system. Its warm, slightly bitter nature helps move stuck Qi in the Middle Jiao, easing feelings of fullness, bloating and discomfort after eating. By transforming Damp and Phlegm, Chen Pi supports a lighter, clearer sensation in the body, particularly when digestion has become sluggish from stress, irregular meals or rich, heavy foods.
Used in small amounts in teas, soups and slow-cooked dishes, Chen Pi helps the Spleen and Stomach work more efficiently so nourishment can be better absorbed and utilised. You’ll Need
Fresh Citrus Peels - tangerines, oranges, satsumas, clementines etc…
Baking paper
Drying rack or oven
Instructions
Choose organic oranges, tangerines or satsumas if you can.
Wash, dry and peel the fruit
Cut the peel into thin strips or small pieces.
Lay them on a clean tray or rack somewhere warm and airy (by a radiator, sunny windowsill or in an oven on the lowest setting with the door slightly open).
Dry until the peel is completely hard and brittle – this can take a few days if air-drying. If you're using an oven, 2-3 hours at 50°C/122°F should do the trick!
Store in a glass jar in a cool, dry place. The flavour will deepen as it ages.

To use, you can add a small piece of dried peel to warm teas, congee, porridge, soups, stews or sauces for a gentle citrus bitterness that supports digestion.
